Talia’s Treats : Third Heaven Cake

With chocolate chips, caramel, chocolate ganache and pecan toffee all in one cake, there’s no wonder it’s called Third Heaven Cake. My mouth just watered a little bit as I wrote that. Welcome to the second installment of Talia’s Treats.

I think the video will be a useful visual for the different steps you need to take. Plus, I put a pretty good backing track to it so it’ll be nice to watch :) UPDATE: OK, I’d initially forgotten to put in the one cup of brown sugar, so if you tried this as soon as you read it and failed, that’s why haha :/ Sorry, it’s added in now !

Cake
2 cups all purpose flour
1 cup brown sugar packed
½ cup sugar
3 tsps baking powder
1 tsp salt
½ tsp soda
½ cup shortening or butter
1 ¼ cups milk
3 eggs
Chocolate chips
Caramel Topping:
50g butter
1 can condensed milk
4 tbsp golden syrup
¼ cup brown sugar
½ tsp sea salt flakes
Chocolate Ganache
150g dark chocolate
50mls cream
Toffee Pecan:
1 cup caster sugar
2 tbsp water
1 cup pecans
1 tsp sea salt flakes

METHOD
1. Place all ingredients (except choc chips) in mixer bowl. Blend ½ min on low speed, then beat 3 mins on high speed. Add choc chips, mix. Shake some choc chips into the base of the greased, lined pan. Pour mixture into pan (8 or 9 inch). Bake 40-45 mins or until pick comes out clean. Cool.
2. For the caramel topping, melt butter and sugar in saucepan, add rest of ingredients, stir over medium heat until boils, and thickens. Cool slightly, then cover cake. Set aside to cool.
3. For the Chocolate Ganache, melt ingredients together, stirring till glossy. Completely cover cake with the ganache.
4. For the Toffee Pecans, place sugar and water in a large non-stick frying pan over medium heat and cook for 4 mins or until sugar is dissolved. Sprinkle over the pecans and salt and cook for a further 2-3 mins or until golden. Pour onto a baking tray lined with baking paper and allow to cool. Roughly chop. Sprinkle over cake to decorate.
5. Serve cake with cream.

    Oh yeah! You’ll want to buy the real Chelsea Golden Syrup for this. Don’t go budget-wise and try Pams for instance. Learnt the hard way the caramel just doesn’t thicken and set. Use Chelsea, makes all the difference.

    Oh damn! This sounds so good, especially with all that caramel, and looks gorgeous.

    I’ve heard funny things about cheap sugar too, that it won’t caramelise and stuff – weird! Get it together Pams, some of us are trying to save money here!
