I made mini bacon lettuce, tomato and avocado bagels for everyone while we opened the presents, super easy treat – as long as there are generous helpings of Best Foods Mayo and Cream Cheese they’ll be bloody delish – clearly not the healthiest wee snack, but fuggit it’s the holidays!
I also made these chicken pies, clearly delicious cos they were half gone before Penina could take the photo. If you’ve been invited round to a pot-luck lunch or dinner these are a real crowd pleaser. If you wanted to prepare them the night or day before you can cook the chicken filling and leave that overnight in the fridge, line your muffin tins with the pastry, and cut out the pie tops too, just separate them with baking paper – and pop everything in the fridge overnight. That way, all you need to do the next day is spoon the filling into the pies, with grated parmesan on top, pop their tops on and chuck it in the oven for 30 mins. We also indulged in a bit of Rekorderlig Cider, Strawberry and Lime with strawberries from the Mangere Bridge Strawberry Farm. If you can, stock up on the huge punnets of strawberries from the MB Strawberry farm to go with all your alcoholic needs this summer. Happy Holidays Y’all.
